Make -Ahead Meatballs & Albondigas Soup

I have made these meatballs before but it was a while before the blog.  I used them to make meatball subs, my husband used them for a variety of meals while I was out of town.  Thought I would go ahead and make them and try the soup.  The soup is delicious.  A little heat in the background and very hearty to eat.  I made this on September 12th, cold and rainy a perfect day for soup.  This recipe comes from issue 80 April 2010 pages 48-49.  I am going to make the Meatball Stroganoff with the other half of the meatballs.  The meatballs bake in about 10 minutes and are very easy to make.  I was able to make this whole dish without having to buy special ingredients.  A go to cold weather dinner.
