Sun-dried Cherry Tomatoes

Peach 🍑 Squares

So like most of my creations I just winged it with this one. I had bought some peaches a while ago and they were going bad in the back of the fridge so I thought I would cook them up and make like an apple butter jam type thing. So I stewed them and added sugar and pie spices, but it didn't have quite enough tart or sweet to be a good jam by itself.

But I thought it would make a great baked something or other. So I looked at recipes and decided to go with a lemon squares recipe with my puree as a substitute for the lemon filling. And it worked. I didn't add in the extra sugar to the filing either since I had already sweetened the puree previously. I did firm it up though with whipped egg whites. Then I just poured that over the base crust and  then put a little bit of crumble on top and baked it. After it cooled it tasted good but, could've used just a touch more sweetness so I sprinkled powdered sugar on top.  I don't have a good recipe to add to this but that's just how I roll.
